"Back in the day" logic of debit over credit was that "spending money you actually have" but really, it's more just a safeguard against retardation. I use cash for things that are just whatever sketchy that a refund is an impossibility, credit if it's something I have doubts about and can just contest if they don't honor or it's just skeevy. Debit is pretty much just for withdrawing from an ATM.

And no, there's no difference in payment tracking/data selling between debit or credit; they use the same systems and are sold all the same.
