Yeah, no one here is talking about the starch leaching out from the potatoes to thicken anything. We're talking about the potatoes literally breaking down into mush, and having THAT ""thicken"" the soup.
We're effectively talking about adding small amounts of mashed potato to a soup to "thicken" it.
Nothing to do really with the starch.
