So I tried a couple of these and so far they work pretty well. Oscura OS is my favorite so far, this being a lightweight debloated preactivated Windows 10 knock off. I was able to install it completely offline, no registration or subscription needed and as far as I can tell auto-updates are disabled by default. I think I'll continue using Obscura because it's better than I expected.
