Do what the Russians and Chinese do, use old air-gapped (offline) computer systems with de-bloated reverse engineered operating systems and/or typewriters for the most sensitive information. Anything online, anything involving "the cloud" or Big Tech is open game to all kinds of bad actors around the world.
