We don't. Paleontologists using biology research, comparative analysis and common sense, but in reality there is plenty of assumptions.

Many extinct species were reconstructed by few bones, or even part of jaw. They comparing phenotype traits of bones to other, better known animals, and use their as model. That way is pretty sane, but may give errors of course. But we may never know.

Book very related. It has some nice reimaginations of dinos, and hypothetical reconstructions of contemporary animals, meanwhile discusses the pitfalls of this profession.
I remember once we had a discussion about this.

This is absurd. There are intricacies in bone wear and shape that would tell you that a cow is absolutely not a speed runner. There are also fossils with impressions of flesh which give a better idea of what is around the bones. Albeit I am a geochemist, but from talking with my paleontology colleagues it is nowhere near as all the images that have been posted make it out to be.

What if those bones aren't available? I picked that illustration because that looks breddy cool. In general the book shows the gaps of information, or gives explanations. Before you judge, check the fucking book.

Bones could inspire the legend. Maybe was mentioned before, a species of dwarf elephant lived on the islands of the Mediterranean until it went extinct bout 10K years ago. Their skulls could be the basis of the idea of cyclops.
