Specific taste, maybe you've got one of those like buckwheat honey can be pretty strong, I still like it but it might be acquired taste thing. I've recommended linden because I don't think you can actually go wrong with it, it's mild but it has a very pleasant taste that you cannot confuse with others. And also it does crystalize into a very nice light paste that is just perfect for making butter&honey sandwiches with.
