Cooking with heat is like driving a stick shift. Low heat is first gear, medium heat is second and third and high heat is fourth or fifth. If you start in fifth gear, youll burn the clutch. Same in the kitchen, if you jump straight to high heat, everything burns before it cooks. Young cooks need to learn when to shift gears
