that's not really true. firstly, there's an official signup process now that doesn't require any phone number. it's a crypto thing involving TON or whatever it's called. last I checked the only difficulty is bypassing a qrcode.
secondly I don't think it's true that a real phone number is required. what you need if you're going the usual route is a smartphone. you can emulate one on your pc with 100% anonymity and simply rent out a phone number from whatever service you choose.
and if you're too lazy for that you can simply buy a burner smartphone and sim which is what most people do.
